  • 1 medium zucchini, halved and sliced
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/3 cup Kalamata olives, sliced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh parsley, chopped
  • Juice of half a lemon

Instructions

  1. Preheat Your Equipment: Heat a large skillet over medium-high heat for about 2 minutes.
  2. Combine Ingredients: Add olive oil and ground beef to the skillet. Cook until browned and crumbled, about 6–8 minutes.
  3. Prepare Your Cooking Vessel: Remove beef and set aside. In the same skillet, add garlic, onion, and zucchini. Cook for 3–4 minutes until slightly tender.
  4. Assemble the Dish: Add bell pepper, cherry tomatoes, olives, and sun-dried tomatoes. Stir in cumin, oregano, salt, and pepper. Cook for another 3–5 minutes.
  5. Cook to Perfection: Return beef to the skillet and stir everything together. Let cook for 2–3 more minutes to meld flavors.
  6. Finishing Touches: Turn off the heat, squeeze lemon juice over the stir fry, and sprinkle with parsley.
