Soft matcha cookies with a molten white chocolate center that flows beautifully when warm. A vibrant green dessert with a creamy lava surprise in every bite.

Ingredients

Scale
  • 1/2 cup (113 grams) unsalted butter, softened
  • 1/2 cup (100 grams) granulated sugar
  • 1/4 cup (50 grams) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (155 grams) all purpose flour
  • 1 tablespoon (6 grams) matcha powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 8 small white chocolate chunks (about 120 grams total)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until smooth and fully incorporated.
  4. In a separate bowl, whisk together flour, matcha powder, baking powder, and salt.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined.
  6. Scoop portions of dough, flatten slightly, place a white chocolate chunk in the center, and wrap the dough completely around it to form a ball.
  7. Place dough balls on the prepared baking sheet, spaced apart.
  8. Bake for 9 to 11 minutes, until the edges are set but the centers remain soft.
  9. Allow cookies to rest on the baking sheet for 5 minutes before serving to let the molten center settle slightly.

Notes

  • Chill the dough for 20 minutes if it feels too soft.
  • Do not overbake to maintain the molten center.
  • Use high quality matcha for vibrant color and smooth flavor.
  • Reheat baked cookies for 10 seconds in the microwave to restore the lava effect.
