A refreshing tropical mango coconut drink made with layers of sweet mango puree and creamy coconut milk, perfect for sunny days or a fruity treat.

Ingredients

  • 2 large ripe mangoes, peeled and chopped
  • 1 cup full-fat coconut milk
  • 12 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: Diced mango for topping

Instructions

  1. Chill all ingredients ahead of time for best results.
  2. Blend the chopped mangoes into a smooth puree. Add a splash of water if needed.
  3. In a small bowl, mix coconut milk, maple syrup, vanilla extract, and salt.
  4. Pour mango puree into the bottom of clear serving glasses, filling about two-thirds of the way.
  5. Slowly pour the coconut milk mixture on top using the back of a spoon to layer it gently.
  6. Top with diced mango if desired and serve immediately with a straw or spoon.

Notes

  • Use very ripe mangoes for natural sweetness.
  • Chilling the glasses enhances the refreshing experience.
