Creamy coconut chia pudding layered with sweet mango puree, chilled to perfection and served in beautiful jars. A refreshing tropical breakfast or snack that is naturally sweet, satisfying, and perfect for meal prep.

  • 1/2 cup chia seeds
  • 2 cups full fat coconut milk
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 2 large ripe mangoes, peeled and diced
  • 2 tablespoons shredded coconut (optional topping)

Instructions

  1. In a mixing bowl whisk together chia seeds, full fat coconut milk, maple syrup, and vanilla extract until fully combined.
  2. Let the mixture sit for 5 minutes, then whisk again to prevent clumping.
  3. Cover and refrigerate for at least 4 hours or overnight until thickened.
  4. Blend the diced mangoes in a blender or food processor until smooth.
  5. Stir the chilled chia pudding, then spoon it into jars filling each halfway.
  6. Top each jar with a generous layer of mango puree.
  7. Chill for an additional 30 minutes before serving. Garnish with shredded coconut if desired and serve cold.

Notes

  • Stir the chia mixture twice during the first 10 minutes for even texture.
  • Use very ripe mango for natural sweetness and vibrant color.
