Soft and chewy lemon crinkle cookies coated in powdered sugar, bursting with fresh citrus flavor and a beautiful crackled finish.

Ingredients

  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. In another bowl, beat butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, then mix in lemon juice, lemon zest, and vanilla extract.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Chill dough for 30 minutes.
  7. Roll tablespoon sized dough balls and coat generously in powdered sugar.
  8. Bake for 10 to 12 minutes until tops crack and edges are set.
  9. Cool on baking sheet for 5 minutes before transferring to a rack.
