A hearty, comforting casserole layered with spiced beef, peppers, tomatoes, creamy topping, and a golden biscuit crust—perfect for family dinners or potlucks.

Ingredients

  • Ground Beef: 1 pound – brings savory richness and a hearty bite.
  • Onion: 1 medium, chopped – adds sweetness and depth.
  • Bell Peppers: 2 (one red, one green), diced – brings color and a sweet crunch.
  • Taco Seasoning: 1 packet – infuses the beef with bold, Southwestern flavor.
  • Canned Diced Tomatoes with Green Chilies: 1 can (10 ounces), drained – adds moisture, tang, and a hint of spice.
  • Sour Cream: 1 cup – provides a creamy, tangy layer.
  • Mayonnaise: 1/2 cup – adds richness and blends beautifully with sour cream.
  • Cheddar Cheese: 2 cups shredded – melty, sharp, and irresistible.
  • Biscuit Dough: 1 tube (8-count refrigerated biscuits) – forms a fluffy, golden base.

Instructions

  1. Preheat Your Equipment: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Combine Ingredients: Brown ground beef in a skillet, drain excess fat, add onions and peppers until tender, then stir in taco seasoning and tomatoes. Simmer briefly.
  3. Prepare Your Cooking Vessel: Press biscuit dough into the baking dish and pre-bake for 5–6 minutes.
  4. Assemble the Dish: Spread beef mixture over biscuits. Mix sour cream, mayo, and half the cheese, then layer it on top. Sprinkle remaining cheese over that.
  5. Cook to Perfection: Bake uncovered for 30–35 minutes, until cheese is golden and bubbly.
  6. Finishing Touches: Let rest 10 minutes before slicing to set layers.
  7. Serve and Enjoy: Serve warm with optional garnishes like salsa or fresh herbs.

Notes

  • Pre-bake the biscuit layer to prevent sogginess.
  • Drain beef well to keep casserole light and flavorful.
  • Let it rest after baking so it slices cleanly.
  • Freshly shredded cheese melts better than pre-shredded.
