A refreshing honey ginger citrus soda made with fresh lemon juice, orange juice, grated ginger, and natural honey, topped with chilled sparkling water. Bright, lightly sweet, and gently spicy with lively bubbles, this homemade soda is ready in just 15 minutes.

Ingredients

  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh orange juice
  • 1 tablespoon finely grated fresh ginger
  • 2 tablespoons honey
  • 2 tablespoons water
  • 2 cups chilled sparkling water
  • 1 cup ice cubes
  • 4 thin lemon slices
  • 1 fresh rosemary sprig

Instructions

  1. Chill the glasses and sparkling water in advance.
  2. In a small saucepan over low heat, combine the grated ginger, honey, and 2 tablespoons water. Warm gently for 3 to 4 minutes, stirring until the honey fully dissolves.
  3. Remove from heat and strain the mixture through a fine mesh strainer into a bowl to remove the ginger pulp.
  4. In a pitcher, combine the strained honey ginger mixture with the fresh lemon juice and fresh orange juice. Stir well.
  5. Fill two tall glasses halfway with ice cubes.
  6. Divide the citrus mixture evenly between the glasses.
  7. Top each glass with 1 cup of chilled sparkling water.
  8. Add thin lemon slices and a rosemary sprig to each glass, gently stir once, and serve immediately.

Notes

  • Do not boil the honey mixture to preserve its flavor.
  • Add sparkling water just before serving to maintain carbonation.
  • For stronger ginger flavor, allow the ginger to steep slightly longer before straining.
  • Taste the citrus base before adding sparkling water and adjust sweetness if needed.
