A fun fusion of two classics, Homemade Mexican Pizza combines crispy tortillas, spiced beef, creamy beans, melty cheese, and fresh toppings for a bold and satisfying dish that’s ready in under 40 minutes.

Ingredients

  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 1 cup refried beans
  • 4 large tortillas (corn or flour)
  • 1 ½ cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup tomato sauce
  • 1 cup diced tomatoes
  • ½ cup sliced green onions
  • ¼ cup sliced black olives
  • 2 fresh jalapeños, sliced
  • Handful chopped cilantro

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Brown the ground beef in a skillet, stir in taco seasoning, and set aside. Warm the refried beans separately.
  3. Lightly toast the tortillas on a skillet to keep them crisp.
  4. Spread beans on one tortilla, top with beef, then add another tortilla. Spread tomato sauce, sprinkle cheese, and add toppings.
  5. Bake on a sheet for 8–10 minutes until cheese is melted and bubbly.
  6. Remove from oven, sprinkle with fresh cilantro, and slice into wedges.
  7. Serve hot with sour cream, salsa, or guacamole.

Notes

  • Toast tortillas before layering to avoid sogginess.
  • Use parchment paper for easier baking and cleanup.
  • Broil for 1–2 minutes at the end for extra bubbly cheese.
  • Squeeze lime juice on top for a burst of freshness.
