A soft and satisfying wrap filled with fluffy scrambled eggs, creamy Greek yogurt, fresh spinach, and juicy tomatoes, all rolled into a wholesome whole wheat tortilla. Perfect for a quick, nourishing breakfast or light lunch.

Ingredients

  • 3 large eggs
  • 1/3 cup plain Greek yogurt
  • 1/2 cup fresh spinach, chopped
  • 1 medium tomato, diced
  • 2 large whole wheat tortillas
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place a nonstick skillet over medium low heat and allow it to warm for about 1 minute.
  2. In a bowl, whisk the eggs with salt and black pepper until fully blended and slightly frothy.
  3. Add olive oil to the skillet and swirl to coat the surface evenly.
  4. Pour the eggs into the skillet and gently stir with a spatula, folding slowly until the eggs are just set and still soft. Remove from heat. Warm the tortillas briefly, spread Greek yogurt evenly over each tortilla, then top with scrambled eggs, chopped spinach, and diced tomato.
  5. If desired, lightly toast the filled wrap in the pan for 1 to 2 minutes per side for a slightly crisp exterior.
  6. Fold the sides inward and roll tightly into a wrap. Slice in half.
  7. Serve immediately while warm and fresh.

Notes

  • Cook the eggs slowly to keep them tender and fluffy.
  • Pat diced tomatoes dry slightly if they are very juicy to prevent sogginess.
  • Do not overfill the tortilla to make rolling easier.
