A creamy and naturally sweet healthy berry fudge made with mixed berries, coconut milk, and dark chocolate. No baking required and perfect for a wholesome dessert or snack.

Ingredients

  • 1 1/2 cups (225 grams) fresh or frozen mixed berries
  • 1 cup (240 ml) full fat coconut milk
  • 1 cup (170 grams) dark chocolate chips
  • 1/4 cup (60 ml) honey or maple syrup
  • 1 teaspoon (5 ml) vanilla extract
  • 1/8 teaspoon salt

Instructions

  1. Line an 8 inch square pan with parchment paper and set aside.
  2. In a saucepan over low heat, combine full fat coconut milk and dark chocolate chips. Stir until completely melted and smooth.
  3. In a blender, puree the mixed berries until fully smooth.
  4. Stir the berry puree, honey or maple syrup, vanilla extract, and salt into the melted chocolate mixture until fully combined.
  5. Continue stirring gently over low heat for 1 to 2 minutes until glossy and smooth.
  6. Pour the mixture into the prepared pan and smooth the top evenly.
  7. Refrigerate for at least 3 hours or freeze for 1 hour until firm, then slice into 16 squares and serve.

Notes

  • Allow the fudge to sit at room temperature for 5 minutes before slicing for cleaner cuts.
  • Use a warm knife for smooth edges.
  • Store pieces separated with parchment paper to prevent sticking.
