Guacamole Shrimp Bites

Crisp tortilla chips or cool cucumber slices topped with creamy, zesty guacamole and tender, chili-lime shrimp for a fresh, elegant party bite that disappears fast.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tsp chili powder
  • 2 tbsp fresh lime juice, divided
  • 2 ripe avocados
  • 2 tbsp finely diced red onion
  • 1 small tomato, seeded and diced
  • 2 tbsp chopped cilantro, plus extra for garnish
  • 1/2 tsp fine salt
  • 1/4 tsp black pepper
  • 20 tortilla chips or 20 cucumber slices

Instructions

  1. Pat the shrimp dry, then toss with garlic, chili powder, 1/2 tsp salt, 1/4 tsp pepper, and 1 tbsp lime juice.
  2. Heat olive oil in a skillet over medium high until shimmering.
  3. Sear shrimp 2 to 3 minutes per side until pink and lightly browned, then set aside.
  4. Mash avocados in a bowl, then fold in red onion, tomato, cilantro, remaining 1 tbsp lime juice, and a pinch of salt to taste.
  5. Spoon a heaping teaspoon of guacamole onto each tortilla chip or cucumber slice.
  6. Top each with one shrimp, then garnish with a little cilantro.
  7. Serve immediately with extra lime wedges if desired.

Notes

  • Assemble just before serving to keep chips crisp and colors vibrant.
  • Press plastic wrap directly onto guacamole surface if holding for a short time to slow browning.
  • Pat shrimp very dry for better searing and juicier texture.
  • For gluten free bites, use certified gluten free tortilla chips or choose cucumber slices.
  • Adjust heat by adding diced jalapeño to the guacamole or a pinch of cayenne to the shrimp.
  • Chill cucumber bases for extra refreshing crunch.
