  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 large carrots, sliced
  • 2 celery stalks, chopped
  • 2 medium potatoes, diced
  • 1 cup frozen peas
  • 1 can (14.5 oz) crushed tomatoes
  • 4 cups beef broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme

Instructions

  1. Place a large pot or Dutch oven over medium-high heat. Add olive oil.
  2. Sauté onion, garlic, carrots, and celery for 5–6 minutes until softened.
  3. Push veggies aside, add ground beef, and cook until browned. Season with salt, pepper, and thyme.
  4. Add potatoes, crushed tomatoes, and beef broth. Stir and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 25–30 minutes, until potatoes are tender.
  6. Stir in peas and simmer 5 more minutes. Adjust seasoning if needed.
  7. Serve hot with fresh herbs or crusty bread.
