  • 1. 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized cubes
  • 2. 1 cup ranch dressing
  • 3. 3 cloves garlic, minced
  • 4. 1/2 cup grated Parmesan cheese
  • 5. 1 tbsp olive oil
  • 6. 1 tsp dried Italian seasoning
  • 7. 1/2 tsp paprika
  • 8. 1/2 tsp black pepper
  • 9. 1/2 tsp salt
  • 10. Fresh parsley, chopped (optional garnish)
  • 11. Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, whisk together ranch dressing, minced garlic, Parmesan cheese, olive oil, Italian seasoning, paprika, salt, and pepper.
  3. Add chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour (up to 8 hours for deeper flavor).
  4. Preheat the grill to medium-high heat and lightly oil the grates.
  5. Thread marinated chicken pieces onto skewers.
  6. Grill skewers for 10–12 minutes, turning occasionally, until chicken is fully cooked and lightly charred.
  7. Sprinkle with fresh parsley before serving if desired.
