Ingredients

  • 4 boneless skinless chicken thighs or breasts, pounded evenly
  • 1/2 cup BBQ sauce
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 4 slices cheddar cheese
  • 1 cup arugula or lettuce
  • 1/2 red onion, thinly sliced
  • 4 brioche or hoagie buns
  • 1/4 cup mayonnaise or aioli (optional)
  • 1/4 cup pickles (optional)

Instructions

  1. Preheat your grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.
  2. Season chicken with salt and pepper, then coat with BBQ sauce. Let sit for 10 minutes.
  3. Brush the grill with olive oil and place chicken on the grill, smooth side down.
  4. Grill chicken for 5–7 minutes per side, or until internal temperature reaches 165°F. In the last minute, add cheese slices to melt.
  5. Toast the buns cut side down on the grill for 1–2 minutes.
  6. Spread mayo or aioli on buns, then layer with greens, grilled chicken, onions, and pickles.
  7. Close sandwiches, slice if desired, and serve hot.
