Smoky grilled sardines brushed with a sticky barbecue style glaze and served over crisp toasted bread. This quick and flavorful dish balances rich, flaky fish with sweet, tangy sauce and fresh herbs.

Ingredients

  • 8 whole fresh sardines, cleaned and gutted
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup barbecue sauce
  • 1 tablespoon lemon juice
  • 1 clove garlic, finely minced
  • 4 thick slices rustic bread
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat a grill or grill pan to medium high heat.
  2. In a small bowl, mix barbecue sauce, lemon juice, and minced garlic until combined.
  3. Pat the sardines dry, brush lightly with olive oil, and season with salt and black pepper.
  4. Place sardines on the grill and cook for 3 to 4 minutes per side.
  5. During the last minute of cooking, brush the sardines with the barbecue mixture to allow it to caramelize slightly.
  6. Toast the rustic bread slices until golden and crisp.
  7. Place grilled sardines over the toasted bread and spoon a little extra glaze on top.
  8. Sprinkle with chopped parsley and serve immediately.

Notes

  • Pat sardines dry before grilling for better caramelization.
  • Brush glaze toward the end of cooking to prevent burning.
  • Serve immediately while the toast remains crisp.
