A silky and vibrant green pea mint cream soup made with sweet peas, fresh mint, and a touch of cream for a refreshing yet comforting bowl.

Ingredients

  • 4 cups (600 g) frozen green peas
  • 1 medium yellow onion (about 150 g), chopped
  • 2 garlic cloves, minced
  • 3 cups (720 ml) vegetable broth
  • 1/2 cup (120 ml) heavy cream
  • 1/4 cup fresh mint leaves, loosely packed
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (6 g) salt, or to taste
  • 1/2 teaspoon (2 g) black pepper

Instructions

  1. Place a medium pot over medium heat.
  2. Add olive oil and sauté the chopped onion for about 4 minutes until soft and translucent.
  3. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Add frozen green peas and vegetable broth. Bring to a gentle simmer.
  5. Simmer for 5 to 7 minutes until the peas are tender and bright green.
  6. Remove from heat and stir in the fresh mint leaves.
  7. Blend the soup until completely smooth using a blender or immersion blender.
  8. Stir in heavy cream and season with salt and black pepper to taste.
  9. Serve warm, garnished with a small swirl of cream and a mint leaf if desired.

Notes

  • Do not overcook the peas to maintain their bright green color.
  • Add mint after cooking to preserve its fresh flavor.
  • Adjust thickness by adding a little extra broth if needed.
  • Store in an airtight container in the refrigerator for up to 4 days.
