Soft, fluffy, and warmly spiced, these Gluten Free Apple Cider Donuts are baked instead of fried and coated in cinnamon sugar for the perfect autumn treat.

Ingredients

  • 1 ½ cups apple cider, reduced to ½ cup
  • 2 cups gluten free all-purpose flour blend
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup brown sugar, packed
  • ½ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 2 teaspoons vanilla extract
  • ½ cup milk (dairy or non-dairy)
  • 1 cup granulated sugar + 2 teaspoons cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a donut pan.
  2. In a saucepan, reduce apple cider from 1 ½ cups to ½ cup. Let cool.
  3. In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, whisk eggs, brown sugar, granulated sugar, melted butter, vanilla, milk, and reduced cider.
  5. Combine wet and dry mixtures until just blended. Do not overmix.
  6. Spoon or pipe batter into donut pan, filling each ¾ full.
  7. Bake 12–15 minutes until donuts spring back when lightly touched.
  8. Cool 5 minutes, then remove and roll warm donuts in cinnamon-sugar mixture.
  9. Serve immediately for best flavor.

Notes

  • Reduce the cider for a more concentrated apple flavor.
  • Pipe the batter with a bag for even donuts.
  • Roll in cinnamon sugar while donuts are still warm so it sticks.
  • Freeze uncoated donuts and coat after reheating for later enjoyment.
