Garlic Yogurt Slaw

- 1½ cups purple cabbage, finely shredded
- 1 cup carrots, grated
- 1 cup plain thick yogurt
- 2 cloves garlic, finely grated
- 1 tablespoon lemon juice

- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- In a large mixing bowl, whisk together the yogurt, grated garlic, lemon juice, olive oil, salt, and black pepper until smooth.
- Add the shredded green cabbage, purple cabbage, and grated carrots to the bowl.
- Gently toss until all the vegetables are evenly coated with the yogurt dressing.
- Cover and refrigerate for about 20 minutes to allow the flavors to blend.
- Stir once more, taste, and adjust seasoning if needed before serving.
Notes
