A cool, creamy, and crunchy slaw made with crisp cabbage, fresh carrots, and a tangy garlic yogurt dressing that feels light but satisfying.

Ingredients

  • 3 cups green cabbage, finely shredded
  • 1½ cups purple cabbage, finely shredded
  • 1 cup carrots, grated
  • 1 cup plain thick yogurt
  • 2 cloves garlic, finely grated
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. In a large mixing bowl, whisk together the yogurt, grated garlic, lemon juice, olive oil, salt, and black pepper until smooth.
  2. Add the shredded green cabbage, purple cabbage, and grated carrots to the bowl.
  3. Gently toss until all the vegetables are evenly coated with the yogurt dressing.
  4. Cover and refrigerate for about 20 minutes to allow the flavors to blend.
  5. Stir once more, taste, and adjust seasoning if needed before serving.

Notes

  • For a thicker dressing, use Greek yogurt.
  • Letting the slaw rest helps soften the cabbage slightly while keeping it crunchy.
  • Adjust garlic to taste if you prefer a milder flavor.
