Golden, garlicky shrimp roasted under a blanket of nutty Parmesan with a light crunchy topping. Fast, flavorful, and perfect as an appetizer or main.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1/2 teaspoon paprika
  • 1/2 teaspoon fine salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 lemon, cut into wedges

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss shrimp with olive oil, minced garlic, paprika, salt, and black pepper until evenly coated.
  3. Arrange shrimp in a single layer on the prepared baking sheet.
  4. Sprinkle evenly with the freshly grated Parmesan and breadcrumbs.
  5. Roast for 8 to 10 minutes, until shrimp are pink and opaque and the topping is lightly golden.
  6. Garnish with chopped parsley and squeeze fresh lemon juice over the hot shrimp.
  7. Serve immediately as an appetizer or over pasta, rice, or salad.

Notes

  • Use large shrimp to avoid overcooking and keep them juicy.
  • Do not overcrowd the pan, space helps the topping crisp.
  • For a richer flavor, finish with an extra dusting of Parmesan right out of the oven.
  • For gluten free, use gluten-free breadcrumbs or omit them.
