Garlic Butter Chicken Bites with Rice Paper

Crispy rice paper parcels filled with juicy garlic butter chicken bites, pan fried until golden and served warm with extra garlic butter for dipping. A savory, crunchy, flavor packed dish perfect for dinner or entertaining.

Ingredients

  • 1 pound boneless skinless chicken breast, cut into bite sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 8 rice paper sheets
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat a nonstick skillet over medium heat.
  2. Season the chicken pieces with salt and black pepper.
  3. Add olive oil and 2 tablespoons of butter to the skillet.
  4. Sauté the chicken for 6 to 8 minutes until fully cooked.
  5. Add the minced garlic during the last minute of cooking and stir until fragrant.
  6. Remove from heat and stir in the remaining 2 tablespoons of butter and chopped parsley.
  7. Briefly dip one rice paper sheet into warm water until pliable.
  8. Place a portion of the garlic butter chicken in the center and fold tightly into a parcel.
  9. Repeat with remaining rice paper sheets and filling.
  10. Place the wrapped parcels seam side down in the skillet.
  11. Cook for 2 to 3 minutes per side until golden and crispy.
  12. Serve warm with extra melted garlic butter if desired.

Notes

  • Do not over soak the rice paper to prevent tearing
  • Cook over medium heat to avoid burning the butter
  • Reheat leftovers in a skillet to restore crispiness
