A refreshing frozen yogurt bark made with creamy Greek yogurt, honey, vanilla, and fresh strawberries, blueberries, and raspberries. It is light, fruity, and perfect for a cool snack or healthy dessert.

Ingredients

  • 2 cups full fat plain Greek yogurt
  • 2 tablespoons honey
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries, gently broken in halves

Instructions

  1. Line a baking sheet with parchment paper and clear space in the freezer so the tray can sit flat.
  2. In a mixing bowl, stir together the Greek yogurt, honey, and vanilla extract until completely smooth and creamy.
  3. Place the lined baking sheet on a stable surface so it does not shift while spreading.
  4. Spread the yogurt mixture evenly onto the parchment paper, about half an inch thick. Scatter the strawberries, blueberries, and raspberries evenly across the surface, gently pressing them into the yogurt.
  5. Transfer the tray to the freezer and freeze for at least 3 hours, or until fully firm.
  6. Once frozen solid, lift the parchment paper and place the slab on a cutting board. Break or cut into rustic pieces.
  7. Serve immediately for the best creamy texture, and return any leftovers to the freezer promptly.

Notes

  • Use thick Greek yogurt for the creamiest texture.
  • Pat berries completely dry before adding to prevent ice crystals.
  • Let the bark sit at room temperature for 1 to 2 minutes before serving for easier biting.
