Golden baked mashed potato cups filled with gooey melted mozzarella cheese in the center.

Ingredients

  • 3 medium russet potatoes, peeled and cubed
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons melted butter
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F and grease muffin tin.
  2. Boil potatoes until tender and mash with butter, milk, salt, and pepper.
  3. Spoon mashed potatoes into muffin cups and form wells.
  4. Fill wells with shredded mozzarella.
  5. Bake 18 to 22 minutes until golden and cheese melts.
  6. Cool slightly and serve warm.

Notes

  • Use starchy potatoes for fluffiness
  • Do not overfill with cheese
  • Reheat in oven for best texture
