Golden baked mashed potato cups filled with gooey melted mozzarella cheese in the center.
- 3 medium russet potatoes, peeled and cubed
- 1 cup shredded mozzarella cheese
- 2 tablespoons melted butter
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat oven to 375°F and grease muffin tin.
- Boil potatoes until tender and mash with butter, milk, salt, and pepper.
- Spoon mashed potatoes into muffin cups and form wells.
- Fill wells with shredded mozzarella.
- Bake 18 to 22 minutes until golden and cheese melts.
- Cool slightly and serve warm.
Notes
- Use starchy potatoes for fluffiness
- Do not overfill with cheese
- Reheat in oven for best texture
