Soft, golden swirl bread filled with creamy feta and savory olives, baked until fluffy inside and lightly crisp on the outside.

Ingredients

  • 3 1/2 cups all purpose flour
  • 1 1/4 cups warm water
  • 2 1/4 teaspoons active dry yeast
  • 3 tablespoons olive oil
  • 1 1/2 teaspoons salt
  • 1 cup feta cheese, crumbled
  • 3/4 cup black olives, sliced and drained

Instructions

  1. Preheat oven to 375 degrees F and lightly grease a loaf pan or prepare a baking sheet.
  2. In a large bowl, combine warm water and yeast. Let sit for 5 minutes until foamy.
  3. Add flour, olive oil, and salt. Mix until a dough forms, then knead for 8 to 10 minutes until smooth and elastic.
  4. Place dough in a lightly oiled bowl, cover, and let rise for 1 hour or until doubled in size.
  5. Roll the dough into a rectangle on a lightly floured surface.
  6. Evenly sprinkle crumbled feta and sliced olives over the dough.
  7. Roll tightly into a log and place into the prepared pan.
  8. Bake for 30 to 35 minutes until golden brown and hollow sounding when tapped.
  9. Allow to cool slightly before slicing and serving.

Notes

  • Drain olives well to prevent excess moisture in the dough.
  • Let the bread cool before slicing to maintain clean swirls.
  • Store at room temperature in an airtight container for up to 2 days.
  • Freeze sliced portions for up to 2 months and reheat gently.
