Easy Lemon Jello Poke Cake Recipe

A moist lemon cake soaked with lemon Jello and topped with whipped topping — this retro poke cake is a citrusy summer classic.

  • 1 (3 oz) box lemon Jello
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 tub whipped topping
  • 1 tbsp lemon zest (optional)

Instructions

  1. Preheat oven and prepare cake mix according to box instructions.
  2. Bake in a 9×13-inch pan; let cool slightly.
  3. Using a fork or skewer, poke holes all over the cake.
  4. Dissolve Jello in boiling water, add cold water, and pour evenly over cake.
  5. Refrigerate for at least 2 hours.
  6. Spread whipped topping over chilled cake and garnish with lemon zest.
