Chewy marshmallow rice cereal balls filled with colorful mini chocolate candies and coated in glossy pastel white chocolate. A playful no bake Easter treat with a hidden sweet surprise inside.

  • 6 cups crispy rice cereal
  • 4 cups mini marshmallows
  • 3 tablespoons unsalted butter
  • 1 cup mini chocolate candies
  • 2 cups white chocolate melts
  • A few drops each pink, blue, yellow, and lavender food coloring

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. In a large saucepan over low heat, melt the unsalted butter.
  3. Add the mini marshmallows and stir continuously until completely melted and smooth.
  4. Remove from heat and gently fold in the crispy rice cereal until evenly coated.
  5. Allow the mixture to cool slightly until warm but safe to handle.
  6. Scoop about 2 tablespoons of the mixture and flatten it slightly in your palm.
  7. Place a few mini chocolate candies in the center and wrap the mixture around them, rolling into a ball.
  8. Place the formed balls on the prepared baking sheet and let them firm up at room temperature for about 20 minutes.
  9. Melt the white chocolate melts in a heat safe bowl, stirring until smooth.
  10. Divide the melted chocolate into small bowls and tint each with pastel food coloring.
  11. Dip each rice ball into the colored chocolate to coat completely, allowing excess to drip off.
  12. Return coated balls to parchment paper and let the chocolate set fully before serving.

Notes

  • Lightly butter your hands before shaping to prevent sticking.
  • Do not overheat the marshmallows or the texture may become tough.
  • Let the rice balls cool slightly before adding the candy to prevent melting.
  • Store in an airtight container at room temperature for up to three days.
