Soft and chewy cookie bites inspired by rich Middle Eastern flavors, packed with dark chocolate chunks and chopped pistachios. Crisp on the edges, tender in the center, and perfectly sweet with a buttery finish.

  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup dark chocolate chunks
  • 1/3 cup chopped pistachios

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a separate large bowl, cream the softened butter, brown sugar, and granulated sugar until light and smooth.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in the dark chocolate chunks and chopped pistachios.
  7. Scoop tablespoon sized portions of dough and place evenly spaced on the prepared baking sheet.
  8. Bake for 9 to 11 minutes, until the edges are golden and the centers look slightly soft.
  9. Allow the cookie bites to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Serve warm or at room temperature.

Notes

  • Do not overbake to maintain a chewy center.
  • Chill the dough for 30 minutes for thicker cookie bites if desired.
  • Press extra chocolate chunks on top before baking for a bakery style look.
  • Store in an airtight container to keep them soft.
