This rich, moist date cake is naturally sweetened with tender chopped dates and enhanced with warm brown sugar and vanilla. It’s the perfect cozy treat for any season, simple to bake and absolutely delicious.

  • 1 cup chopped dates
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.
  2. Place chopped dates in a saucepan, pour over boiling water, and stir in baking soda. Let sit for 10 minutes to soften.
  3. In a bowl, cream the butter and brown sugar until smooth. Beat in the eggs and vanilla extract.
  4. Stir the softened date mixture into the wet ingredients.
  5. In a separate bowl, whisk together flour, baking powder, and salt. Gradually fold this into the wet mixture.
  6. Stir in walnuts if using, then pour the batter into the prepared baking pan.
  7. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.

Notes

  • For deeper flavor, use dark brown sugar.
  • Letting the cake sit overnight enhances the taste even more.
  • You can toast the walnuts for extra crunch and flavor.
