This Date and Walnut Traybake Cake is the perfect balance of sweet and nutty, with moist dates and crunchy walnuts that make every bite irresistible. It’s quick, easy, and budget-friendly, perfect for tea time or family gatherings.

Ingredients

  • Dates: 200g (chopped)
  • Walnuts: 100g (chopped)
  • Butter: 100g (softened)
  • Sugar: 150g (granulated)
  • Flour: 200g (self-raising)
  • Eggs: 2 large
  • Baking Powder: 1 tsp
  • Vanilla Extract: 1 tsp

Instructions

  1. Preheat Your Equipment: Preheat your oven to 180°C (350°F). Grease and line a 9×13-inch baking pan with parchment paper.
  2. Combine Ingredients: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. Prepare Your Cooking Vessel: Ensure your baking pan is greased and lined to prevent the cake from sticking.
  4. Assemble the Dish: Sift the flour and baking powder together, then fold them into the butter mixture, a little at a time. Add the chopped dates and walnuts, mixing gently until everything is combined.
  5. Cook to Perfection: Pour the batter into the prepared baking pan and spread it out evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Finishing Touches: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  7. Serve and Enjoy: Once cooled, cut into squares or slices. Serve with a cup of tea or coffee and enjoy the perfect balance of sweet dates and crunchy walnuts.

Notes

  • For extra flavor, try sprinkling a little cinnamon or nutmeg into the batter.
  • If you want a smoother texture, you can chop the dates into smaller pieces or even blend them.
  • Keep an eye on the cake as it bakes; start checking it after 25 minutes to avoid overbaking it.
