A light, savory, and satisfying crustless quiche filled with fluffy eggs, tender veggies, and melty cheese — perfect for any meal of the day.

Ingredients

  • 5 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup cooked spinach, squeezed dry
  • 1/2 cup red bell pepper, finely diced
  • 1/4 cup onion, finely chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried thyme

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9-inch pie dish.
  2. In a large bowl, whisk together the eggs, milk, cream, salt, pepper, garlic powder, and thyme.
  3. Heat olive oil in a skillet over medium heat. Sauté onion and bell pepper for 3–4 minutes, then stir in spinach and cook 1 more minute. Remove from heat.
  4. Spread vegetables in the pie dish and top with cheese.
  5. Pour egg mixture over the filling and gently stir to combine evenly.
  6. Bake for 35–40 minutes or until center is set and top is golden.
  7. Let cool for 10 minutes before slicing. Serve warm or at room temperature.
