Ingredients

Scale
  • 1 lb Fresh Spinach, cooked and squeezed dry
  • 4 large Eggs, whisked
  • 1 cup Cottage Cheese
  • 1/2 cup Feta Cheese, crumbled
  • 1/2 cup Mozzarella Cheese, shredded
  • 1 small Onion, finely diced
  • 2 cloves Garlic, minced
  • 1 tbsp Olive Oil
  • 1/4 tsp Nutmeg
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. Preheat Your Equipment: Heat oven to 350°F (175°C) and grease a 9-inch pie dish.
  2. Combine Ingredients: In a large bowl, whisk eggs, cottage cheese, feta, mozzarella, nutmeg, salt, and pepper until smooth.
  3. Prepare Your Cooking Vessel: Warm olive oil in a skillet, sauté onion and garlic until softened, then stir in spinach to heat through.
  4. Assemble the Dish: Fold the spinach mixture into the egg mixture until evenly combined, then pour into the prepared pie dish.
  5. Cook to Perfection: Bake 35–40 minutes until set in the center and lightly golden on top.
  6. Finishing Touches: Rest 5–10 minutes for cleaner slices.
  7. Serve and Enjoy: Slice into wedges and serve warm with a crisp salad or roasted vegetables.

Notes

  • Thoroughly squeeze excess moisture from spinach to prevent a watery pie.
  • Use freshly grated cheese for superior melt and flavor.
  • Add a pinch of dill or parsley for a bright herbal note.
  • Sprinkle a little extra mozzarella on top for a deeper golden finish.
