Crock Pot Broccoli Cheese Soup

A creamy, comforting Crock Pot broccoli cheese soup packed with tender broccoli florets, rich cheddar cheese, and a velvety broth — perfect for cozy days.

Ingredients

    • Fresh broccoli, chopped into florets
    • Onion, finely diced
    • Carrots, shredded
    • Celery, diced
    • Chicken or vegetable broth
    • Garlic, minced
    • Heavy cream or half-and-half
    • Cream cheese, softened
    • Shredded cheddar cheese (sharp works best)
    • Butter
    • Flour
    • Salt and pepper to taste

Instructions

    1. Add broccoli, onion, carrots, celery, garlic, and broth to the slow cooker.
    2. Cover and cook on low until vegetables are tender.
    3. In a separate saucepan, melt butter and whisk in flour to make a roux. Slowly whisk in cream until thickened.
    4. Stir the cream mixture into the slow cooker.
    5. Add cream cheese and shredded cheddar, stirring until melted and smooth.
    6. Season with salt and pepper, then serve hot with crusty bread or crackers.
