  • 2 cups cooked and chilled sushi rice
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon salt
  • 2 ripe avocados, sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha
  • 1 small jalapeño, thinly sliced
  • 1 tablespoon sesame seeds
  • 3 tablespoons vegetable oil

Instructions

  1. In a mixing bowl, gently combine the chilled sushi rice with rice vinegar and salt until evenly seasoned.
  2. Lightly oil your hands and press the rice into a compact layer about 1 inch thick, then cut into small rectangles or squares.
  3. Heat a nonstick skillet over medium heat and add the vegetable oil.
  4. Place the rice pieces into the skillet without overcrowding and cook for 3 to 4 minutes per side until golden brown and crispy.
  5. In a small bowl, mix mayonnaise and sriracha until smooth.
  6. Top each crispy rice piece with sliced avocado, drizzle with spicy mayo, add jalapeño slices, and sprinkle with sesame seeds.
  7. Serve immediately while warm and crisp.

Notes

  • Chill the rice for at least 1 hour before shaping for best results.
  • Use a sharp knife dipped in water to cut clean rice squares.
  • Add avocado just before serving to prevent browning.
  • Reheat leftover crispy rice in a skillet to restore crunch.
