Golden, crispy potato bombs filled with gooey cheese and drenched in savory garlic butter—a snack-time favorite that’s impossible to resist.

Ingredients

  • Mashed Potatoes: 3 cups – soft and seasoned, they form the base of the bombs.
  • Cheddar Cheese: 1 cup, cubed – gooey, melty, and sharp for bold flavor.
  • Breadcrumbs: 2 cups – for that golden, crunchy exterior.
  • Eggs: 2, beaten – helps bind the breadcrumbs during coating.
  • All-Purpose Flour: 1 cup – for dredging and securing the crust.
  • Garlic Cloves: 4, minced – infuses the butter with deep flavor.
  • Butter: 1/2 cup – melted into a rich garlic glaze.
  • Parsley: 2 tablespoons, chopped – adds color and fresh herbal notes.
  • Salt: 1 teaspoon – seasons both the potato mix and the butter.
  • Black Pepper: 1/2 teaspoon – adds a mild kick.
  • Oil for Frying: As needed – use a neutral oil like canola or sunflower.

Instructions

  1. Preheat Your Equipment: Heat oil in a deep frying pan over medium-high heat until it reaches 350°F (175°C).
  2. Combine Ingredients: In a bowl, mix mashed potatoes with salt, pepper, and parsley. Chill for 15 minutes.
  3. Prepare Your Cooking Vessel: While potatoes chill, set up a breading station with flour, beaten eggs, and breadcrumbs in separate bowls.
  4. Assemble the Dish: Scoop a tablespoon of mashed potato, flatten slightly, place a cheese cube in the center, and roll into a ball. Repeat with all.
  5. Cook to Perfection: Roll each ball in flour, dip in egg, then coat in breadcrumbs. Repeat egg and breadcrumb coating for extra crispness. Fry in batches for 2–3 minutes until golden.
  6. Finishing Touches: In a small saucepan, melt butter with minced garlic until fragrant. Drizzle the warm garlic butter over the fried bombs.
  7. Serve and Enjoy: Garnish with chopped parsley and serve hot with your favorite dipping sauce.

Notes

  • Chilling helps the balls hold shape during frying.
  • Double-coat in breadcrumbs for extra crunch.
  • Drain on a wire rack to avoid sogginess.
  • Use an ice cream scoop for consistent sizing.
