  • 4 medium Yukon Gold potatoes, cut into 1 inch cubes
  • 3 tablespoons olive oil
  • 1 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl toss the potato cubes with olive oil, garlic powder, dried oregano, salt, and black pepper until evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet.
  4. Sprinkle grated parmesan evenly over the potatoes and gently press so it adheres to the cubes.
  5. Roast for 30 to 35 minutes, flipping halfway through, until golden brown and crispy.
  6. Remove from the oven and sprinkle with freshly chopped parsley.
  7. Serve hot for best texture and flavor.
