A crunchy and juicy chicken sandwich layered with crispy fried noodles, fresh lettuce, and creamy mayonnaise inside a soft toasted bun. This bold and satisfying sandwich delivers texture in every bite and is perfect for lunch or dinner.

  • 2 medium boneless skinless chicken fillets, about 300 grams total
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup all purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1 cup instant fried noodles, lightly crushed
  • 4 soft burger buns
  • 4 lettuce leaves
  • 4 tablespoons mayonnaise
  • About 2 cups vegetable oil for deep frying

Instructions

  1. Heat vegetable oil in a deep pan to 175 degrees Celsius.
  2. Season the chicken fillets with salt, black pepper, and paprika on both sides.
  3. Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with crushed instant noodles.
  4. Coat each chicken fillet in flour, dip into egg, then press into the breadcrumb and noodle mixture. Repeat dipping in egg and crumbs for a double coating.
  5. Fry the coated chicken fillets for 5 to 6 minutes per side until golden brown and fully cooked. Internal temperature should reach 75 degrees Celsius.
  6. Remove the chicken and drain on a wire rack to maintain crispiness.
  7. Lightly toast the burger buns.
  8. Spread mayonnaise on both sides of each bun, add a lettuce leaf, place the crispy chicken on top, and close with the bun.
  9. Serve immediately while hot and crispy.

Notes

  • Do not overcrowd the pan while frying to keep the oil temperature stable.
  • Drain the chicken on a wire rack instead of paper towels to prevent sogginess.
  • Crush the noodles lightly so they add crunch without turning into powder.
  • For extra spice, add chili powder to the flour mixture.
