  • 1 pound large shrimp, peeled and deveined, tails removed
  • 1/2 cup all purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 cup vegetable oil
  • 1 tablespoon fresh parsley, finely chopped

Instructions

  1. Heat vegetable oil in a large skillet over medium high heat.
  2. In one bowl, combine flour, salt, black pepper, and garlic powder.
  3. Place beaten eggs in a second bowl.
  4. In a third bowl, mix breadcrumbs with lemon zest.
  5. Dredge each shrimp in the flour mixture, dip into the egg, then coat thoroughly in the breadcrumb mixture.
  6. Fry shrimp in batches for 2 to 3 minutes per side until golden brown and cooked through.
  7. Transfer to a plate lined with paper towels to drain excess oil.
  8. Drizzle with fresh lemon juice, garnish with chopped parsley, and serve immediately.

  • Pat shrimp completely dry before breading for the crispiest coating.
  • Do not overcrowd the pan to maintain oil temperature.
