  • 1 1/2 pounds boneless skinless chicken thighs, cut into bite sized pieces
  • 1/2 cup cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup vegetable oil
  • 4 cloves garlic, minced
  • 1/3 cup honey
  • 1/4 cup low sodium soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons water
  • 4 cups cooked white rice
  • 2 tablespoons green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Heat a large skillet over medium high heat and prepare rice if not already cooked.
  2. In a bowl whisk together honey, soy sauce, rice vinegar, and water. In another bowl toss chicken with cornstarch, salt, and black pepper until coated.
  3. Add vegetable oil to the skillet and heat until shimmering.
  4. Place chicken in a single layer and cook 4 to 5 minutes per side until golden and cooked through. Cook in batches if needed.
  5. Remove chicken and sauté garlic for 30 seconds. Pour in sauce mixture and simmer 2 to 3 minutes until slightly thickened.
  6. Return chicken to skillet and toss to coat evenly in the sauce.
  7. Serve chicken over warm rice and garnish with green onions and sesame seeds.
