Golden and crispy rice balls filled with garlicky rice and a gooey mozzarella center, coated in breadcrumbs and fried until perfectly crunchy. A comforting appetizer or snack that is irresistibly cheesy.

  • 2 cups cooked white rice, cooled
  • 1 cup mozzarella cheese, cut into small cubes
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups vegetable oil, for frying

Instructions

  1. Heat vegetable oil in a deep skillet over medium heat until it reaches about 350°F.
  2. In a mixing bowl, combine cooked white rice, grated Parmesan cheese, minced garlic, eggs, salt, and black pepper until well mixed.
  3. Scoop a portion of the rice mixture and flatten it slightly in your hand.
  4. Place a cube of mozzarella cheese in the center and roll the mixture into a tight ball, sealing the cheese inside.
  5. Roll each rice ball in all-purpose flour, coating lightly.
  6. Coat the floured rice balls evenly in breadcrumbs.
  7. Fry the rice balls in batches for 3 to 4 minutes until golden brown and crispy.
  8. Remove with a slotted spoon and drain on paper towels.
  9. Serve warm while the cheese center is melted and gooey.

Notes

  • Use cold, day-old rice for best texture and easier shaping.
  • Do not overcrowd the pan while frying to maintain oil temperature.
  • Reheat in the oven at 375°F for about 10 minutes to restore crispiness.
