Golden and crispy on the outside with a herby chickpea interior and a gooey melted cheese center, these Crispy Falafel Cheese Bites are a fun twist on a classic. Perfect as an appetizer, party snack, or wrapped in pita for a flavorful vegetarian meal.

  • 2 cups canned chickpeas, drained and rinsed
  • 0.5 cup fresh parsley, finely chopped
  • 0.25 cup fresh cilantro, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.75 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons all purpose flour
  • 0.75 cup mozzarella cheese, cut into small cubes
  • 1 cup vegetable oil, for shallow frying

Instructions

  1. Heat the vegetable oil in a deep skillet over medium heat until it reaches about 350 degrees Fahrenheit.
  2. In a food processor, pulse the chickpeas, parsley, cilantro, garlic, cumin, coriander, salt, and black pepper until a coarse mixture forms.
  3. Transfer the mixture to a bowl and stir in the all purpose flour until combined.
  4. Scoop about 1 tablespoon of the mixture, flatten slightly, place a cube of mozzarella in the center, and seal the mixture around it to form a ball.
  5. Fry the falafel bites in batches for 3 to 4 minutes, turning occasionally, until golden brown and crispy on all sides.
  6. Remove with a slotted spoon and place on paper towels to drain excess oil.
  7. Serve warm while the cheese inside is melted and gooey.

Notes

  • Do not overcrowd the pan to maintain oil temperature.
  • If the mixture feels too soft, chill it for 15 minutes before shaping.
  • Reheat leftovers in the oven or air fryer to restore crispiness.
