A golden, pan-crisped wrap filled with smashed chickpeas, warm spices, and fresh herbs, simple, satisfying, and perfect for a quick meal.

Ingredients

  • 1 can chickpeas (240 grams drained and rinsed)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 2 large tortilla wraps

Instructions

  1. Heat a nonstick skillet over medium heat.
  2. Add the chickpeas to a mixing bowl and gently smash them with a fork, keeping some texture.
  3. Stir in garlic powder, paprika, salt, black pepper, parsley, and 1 tablespoon of olive oil until well combined.
  4. Spoon the chickpea mixture into the center of each tortilla wrap and fold tightly.
  5. Add the remaining olive oil to the skillet and place the wraps seam-side down.
  6. Cook for several minutes on each side until the wraps are golden and crispy.
  7. Remove from the skillet, rest briefly, then slice and serve warm.

Notes

  • Do not overfill the wraps to help them crisp evenly.
  • Keep some chickpeas chunky for the best texture.
  • Reheat leftovers in a skillet to restore crispiness.
