Golden and crunchy on the outside, tender and cheesy on the inside, these crispy broccoli bites are the perfect snack, appetizer, or veggie-packed side dish that everyone will love.

Ingredients

  • 3 cups fresh broccoli, finely chopped (about 1 large head)
  • 2 large eggs, lightly beaten
  • 1 cup shredded cheddar cheese
  • 1 cup plain breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil spray, light coating for baking

Instructions

  1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a large bowl, combine finely chopped broccoli, lightly beaten eggs, shredded cheddar cheese, breadcrumbs, grated Parmesan, garlic powder, onion powder, salt, and black pepper. Mix until fully combined.
  3. Lightly spray the parchment paper with olive oil spray.
  4. Scoop about 1 tablespoon of the mixture and shape into small rounds. Place evenly spaced on the prepared baking sheet.
  5. Lightly spray the tops with olive oil spray. Bake for 20 minutes, flipping halfway through, until golden brown and crisp.
  6. Remove from the oven and let cool for 5 minutes to firm up before serving.
  7. Serve warm with your favorite dipping sauce.

Notes

  • Finely chop and lightly steam broccoli, then squeeze out excess moisture for best texture.
  • Do not overcrowd the baking sheet to ensure even crisping.
  • For extra crunch, substitute plain breadcrumbs with panko.
  • Reheat leftovers in the oven at 350 degrees Fahrenheit for about 8 minutes to restore crispiness.
