  • 3 cups cooked white beans, drained and rinsed
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated parmesan cheese

Instructions

  1. Heat a large pot over medium heat.
  2. Add olive oil, onion, and garlic, then sauté until soft and fragrant.
  3. Stir in the white beans and thyme, mixing well.
  4. Pour in the vegetable broth and bring to a gentle simmer.
  5. Simmer for 20 minutes, stirring occasionally.
  6. Blend part of the soup until creamy, then stir it back into the pot.
  7. Add parmesan cheese, salt, and black pepper, stirring until combined.
  8. Serve warm.

Notes

  • Blend more or less of the soup depending on your preferred texture.
  • Add extra broth if the soup thickens too much.
