A rich and comforting one pot pasta made with tender chicken, crushed tomatoes, heavy cream, and melted cheese. Everything cooks together for a creamy, flavorful dinner that is perfect for busy nights.

  • 450 grams boneless skinless chicken breast, cut into bite sized pieces
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 cups crushed tomatoes (about 480 grams)
  • 2 cups chicken broth (about 480 milliliters)
  • 1 cup heavy cream (about 240 milliliters)
  • 300 grams uncooked pasta (penne or similar)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup grated mozzarella or parmesan (about 100 grams)
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Heat a large deep pot over medium heat and add olive oil.
  2. Add the chicken pieces and sear for 5 to 6 minutes until lightly golden and cooked through. Remove and set aside.
  3. In the same pot, sauté the minced garlic for about 30 seconds until fragrant.
  4. Stir in crushed tomatoes, chicken broth, heavy cream, salt, black pepper, and Italian seasoning.
  5. Add the uncooked pasta and bring to a gentle simmer.
  6. Cover and cook for 12 to 15 minutes, stirring occasionally, until pasta is tender and sauce thickens.
  7. Return the cooked chicken to the pot and stir in grated cheese until melted and smooth.
  8. Let rest for 3 minutes, then sprinkle with fresh basil before serving.

Notes

  • Stir occasionally to prevent the pasta from sticking to the bottom.
  • If the sauce becomes too thick, add a splash of broth or milk.
  • Use freshly grated cheese for smoother melting.
  • Allow the pasta to rest a few minutes before serving so the sauce can thicken naturally.
