  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 4 cups fresh spinach, loosely packed
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Place a large pot over medium heat and add olive oil.
  2. Sauté the chopped onion for about 5 minutes until translucent, then stir in the garlic and cook for 1 more minute.
  3. Add the diced potatoes and vegetable broth. Bring to a boil, then reduce to a simmer.
  4. Simmer for 15 to 20 minutes or until potatoes are fork-tender.
  5. Blend about half the soup using an immersion blender directly in the pot, then stir in the heavy cream.
  6. Add fresh spinach and cook for 2 to 3 minutes until wilted.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with shredded cheddar if using.
