A cozy one-pot pasta dish made with tender orzo, fresh spinach, and a creamy garlic-parmesan sauce. Perfect for a quick, comforting meal any night of the week.

Ingredients

  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 ½ cups vegetable broth
  • ½ cup heavy cream
  • ½ cup freshly grated parmesan cheese
  • 3 cups fresh spinach, roughly chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Place a large skillet or saucepan over medium heat to warm up.
  2. Add olive oil and minced garlic. Sauté for about 1 minute until fragrant.
  3. Pour in the orzo and stir for another minute to lightly toast it.
  4. Add vegetable broth. Bring to a boil, then reduce heat and simmer, stirring often, for about 10 minutes until orzo is tender.
  5. Stir in heavy cream, parmesan cheese, salt, and pepper. Cook 2–3 minutes more.
  6. Fold in chopped spinach and cook until just wilted.
  7. Add lemon juice and give it a final stir.
  8. Serve warm with extra parmesan if desired.

Notes

  • Use freshly grated cheese for best texture and flavor.
  • If the dish thickens too much, stir in a bit more broth before serving.
  • Add grilled chicken or sautéed mushrooms for a heartier version.
