A cozy and satisfying soup made with soft potato gnocchi, savory sausage, and fresh spinach in a creamy, flavorful broth. It’s rich, comforting, and ready in just 30 minutes.

Ingredients

  • 1 pound Italian sausage
  • 1 pound potato gnocchi
  • 3 cups fresh spinach
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 3 garlic cloves, minced
  • 1 medium yellow onion, diced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Place a large pot over medium heat and warm the olive oil.
  2. Sauté onions for 3–4 minutes, then add garlic and cook for 1 minute.
  3. Add sausage, break it up with a spoon, and cook until browned, about 5–7 minutes.
  4. Pour in chicken broth and bring to a gentle boil. Add gnocchi and reduce to a simmer.
  5. Cook for 4–5 minutes until gnocchi float and are tender.
  6. Stir in heavy cream and spinach. Simmer for another 2–3 minutes until spinach is wilted.
  7. Season with salt and pepper to taste, then serve hot with optional toppings.

Notes

  • Use spicy sausage if you want a little kick.
  • Reheat gently with extra broth to loosen the soup.
  • Add Parmesan cheese for extra richness.
  • Substitute kale or Swiss chard for spinach if preferred.
