  • 2 cups mixed mushrooms, sliced (cremini, shiitake, or button)
  • 1 cup ricotta cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh lemon juice
  • A handful of fresh parsley or microgreens

Instructions

  1. Preheat your skillet over medium-high heat and ready your toaster or oven to crisp the bread.
  2. In the hot skillet, heat olive oil, then add garlic and mushrooms. Sauté until browned and the moisture has evaporated, about 8–10 minutes. Stir in thyme, salt, pepper, and lemon juice.
  3. Toast the bread slices until golden and crisp using a toaster or oven at 375°F for 8 minutes, flipping halfway.
  4. Spread ricotta generously over each toast slice.
  5. Spoon the warm mushroom mixture on top of the ricotta.
  6. Top with chopped parsley or microgreens and let sit a minute before serving.
  7. Serve warm and enjoy!
