  • 300g mixed mushrooms (cremini, shiitake, oyster), sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 2 tablespoons white miso paste
  • 200ml heavy cream
  • 50g Parmesan cheese, grated
  • Salt to taste
  • Freshly cracked black pepper to taste
  • 1/2 cup reserved pasta water
  • Handful of fresh parsley or chives, chopped

Instructions

  1. Preheat Your Equipment: Bring a large pot of salted water to a boil for the pasta. Heat a skillet over medium-high heat.
  2. Combine Ingredients: Add olive oil and butter to the skillet. Sauté mushrooms in batches until golden and caramelized. Remove and set aside.
  3. Prepare Your Cooking Vessel: In the same skillet, add garlic and cook until fragrant. Stir in heavy cream and bring to a gentle simmer.
  4. Assemble the Dish: Whisk miso paste into the cream until fully dissolved. Return mushrooms to the pan.
  5. Cook to Perfection: Cook pasta until al dente, reserving 1/2 cup pasta water. Add pasta to the skillet, tossing with the sauce. Add reserved water as needed for creaminess.
  6. Finishing Touches: Stir in Parmesan and season with black pepper. Adjust salt if needed.
  7. Serve and Enjoy: Plate the pasta, garnish with fresh parsley or chives, and serve hot.
