Ingredients

Scale
  • 4 salmon fillets, about 6 ounces each
  • 1 cup uncooked orzo pasta
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 2 cups chicken broth
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Heat skillet over medium heat.
  2. Season salmon with salt and pepper. Sear in olive oil for 4 to 5 minutes per side. Remove and set aside.
  3. Add butter and garlic to skillet. Sauté until fragrant.
  4. Stir in orzo and toast 1 to 2 minutes. Add chicken broth and simmer about 10 minutes until tender.
  5. Stir in heavy cream and parmesan. Cook until creamy.
  6. Add lemon juice and parsley. Return salmon to skillet and spoon sauce over top.
  7. Serve warm.

Notes

  • Do not overcook salmon
  • Add broth if sauce thickens too much
  • Use freshly grated parmesan for best flavor
