Creamy Corn Rice is a comforting, cheesy casserole loaded with sweet corn, fluffy rice, and a rich blend of cream and cheddar cheese. It’s the perfect side dish or main for cozy weeknights and family gatherings.

  • 3 cups cooked white rice
  • 1.5 cups whole kernel corn (canned or fresh)
  • 1 cup cream-style corn
  • 3/4 cup sour cream
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese, divided
  • 2 tablespoons butter
  • 1/4 cup milk
  • Salt and black pepper to taste
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13 baking dish.
  2. In a large bowl, combine cooked rice, whole kernel corn, cream-style corn, sour cream, cream cheese, butter, milk, salt, pepper, and half the cheddar cheese.
  3. Pour the mixture into the prepared baking dish and spread it evenly.
  4. Top with the remaining cheddar cheese and sprinkle with chopped green onions.
  5. Bake uncovered for 30–35 minutes, or until bubbly and golden on top.
  6. Let it rest for 5–10 minutes before serving.

Notes

  • Use cold, day-old rice for the best texture.
  • Add sautéed veggies or a pinch of cayenne for extra flavor.
  • Shred cheese from a block for optimal melting.
